Favorite Fall Soups

One of my favorite things about the arrival of fall is making soups and stews. I love spending a day in the kitchen preparing food for the busy week, so on Sunday afternoons I will cook a large pot of soup that I can eat throughout the week for lunches. Soups are generally easy to make – once you combine all of the ingredients it can simmer away allowing you to tend to other things.
I try to make a different kind of soup every week, but I do have my favorites that I make more often.
This Chicken Corn Chowder is hearty enough to be a meal. Click on the link for the recipe and a trick for quickly shredding chicken.
